Trenette con Pesto
Serves 8

Trenette is from the Liguria region of Italy known for having a climate that produces the most flavorful basil. Use the Blender Pesto recipe below which yields ¾ cups.

1 lb. Linguini
Grated parmesan

Cook linguini according to package for al dente. Drain. Gently heat 1 pesto recipe. Before serving, toss linguini and pesto together. Serve with grated parmesan.

Blender Pesto
Makes ¾ cup

2 cup fresh basil leaves
½ cup olive oil
2 Tbl pine nuts
2 cloves garlic, lightly crushed
1 tsp sea salt
½ cup freshly grated Parmesan cheese
2 Tbl freshly grated Romano cheese

Put the basil, pine nuts, garlic, and sea salt in the blender and process to a paste. Stop from time to time to scrape down the sides with a rubber spatula. Add the cheeses and slowly drizzle in the olive oil while the machine is running.

Before spooning the pesto over the pasta, add a Tbl or so of the hot water in which the pasta has boiled to the pesto sauce.
