Fagiolini - Green Beans

Serves 6 - 8

1 lb. Green beans
3 Tbls. Olive oil
3 whole, peeled garlic, lightly crushed
¼ tsp. red pepper flakes
salt & pepper

Bring a large pot of salted water to a boil over high heat. Add beans and boil until just about cooked through, 3-5 mins. Drain in a colander and rinse under cold water to stop the cooking. Heat olive oil in a skillet, lightly saute garlic until cooked but not brown. Add red pepper and lightly saute. Add green beans, tossing and coating with the flavored garlic oil until heated through. Season to taste with salt and pepper.
